Ingredients: 1 lb carrots, peeled and chopped. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1/4 cup tahini. 1 can 15 oz chickpeas, drained and rinsed. 2 tablespoons olive oil. 1 teaspoon ground cumin. Salt and pepper to taste. Fresh cilantro or parsley for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cook until softened, about 5 minutes. Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 15-20 minutes. Using an immersion blender or regular blender, blend the soup until smooth. Stir in tahini, ground cumin, salt, and pepper. Adjust seasoning to taste. For the crisped chickpeas, preheat oven to 400F 200C. Spread chickpeas on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly. Bake in the preheated oven for 20-25 minutes, or until chickpeas are crispy and golden brown. Serve the soup hot, garnished with crisped chickpeas and fresh cilantro or parsley. Enjoy!
