Ingredients: 1 lb chanterelle mushrooms, cleaned and sliced. 4 tbsp unsalted butter. 1 onion, finely chopped. 2 cloves garlic, minced. 1/4 cup all-purpose flour. 4 cups chicken or vegetable broth. 2 cups diced potatoes. 1 cup corn kernels. 2 cups whole milk. 1 cup heavy cream. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Melt the butter in a big pot over medium-low heat. Put in the garlic and onions, and cook them until they get soft. Cook until soft after adding the chanterelle mushrooms. Add flour to the mushrooms and mix them around to cover them all. As you pour in the broth, keep stirring to keep the lumps from forming. Put in the corn and potatoes, and cook until the vegetables are soft. Add the heavy cream and milk and mix them together. Add salt and pepper to taste. Let the flavors blend for another 10 minutes by simmering. Serve hot with fresh parsley on top.
