Ingredients: 1 cup tigernut flour. 1/4 cup coconut oil, melted. 3 tablespoons maple syrup. 1 teaspoon vanilla extract. Pinch of salt.
Instructions: Preheat oven to 325F 160C. In a mixing bowl, combine tigernut flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt. Mix until a dough forms. Roll out the dough between two sheets of parchment paper until it's about 1/4 inch thick. Using cookie cutters, cut out shapes and carefully transfer them to a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
