For your DPSG Summer FUNd barbecue, these Grilled Citrus Chicken Skewers are a great addition. The marinade with citrus gives it a tangy kick, and the bright vegetables make it look great. It's simple to make and tastes great!
Ingredients: 1.5 lbs boneless, skinless chicken breasts, cut into cubes. 1/4 cup olive oil. Juice of 2 lemons. Zest of 1 orange. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon paprika. Salt and pepper to taste. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into wedges. Wooden skewers, soaked in water.
Instructions: In a bowl, combine olive oil, lemon juice, orange zest, minced garlic, oregano, paprika, salt, and pepper. Mix well to create the marinade. Place the chicken cubes in a resealable plastic bag and pour half of the marinade over them. Seal the bag and marinate in the refrigerator for at least 30 minutes. Preheat the grill to medium-high heat. Thread marinated chicken cubes onto the soaked skewers, alternating with bell pepper chunks and red onion wedges. Brush the skewers with the remaining marinade before placing them on the preheated grill. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Serve the grilled citrus chicken skewers hot, garnished with additional lemon wedges if desired.
