A quick and easy pasta dish that only needs one pot. It's full of healthy vegetables like mushrooms and zucchini. Excellent for busy weeknights when you need a healthy meal but don't have time to cook.
Ingredients: 8 oz whole wheat spaghetti. 2 medium zucchinis, thinly sliced. 8 oz mushrooms, sliced. 2 cloves garlic, minced. 4 cups vegetable broth. 1 cup cherry tomatoes, halved. 1/4 cup grated Parmesan cheese. 2 tbsp olive oil. 1 tsp dried basil. Salt and pepper to taste.
Instructions: Pasta, zucchini, mushrooms, garlic, vegetable broth, cherry tomatoes, olive oil, dried basil, salt, and pepper should all be put in a large pot. Bring to a boil over a medium-high level of heat. Lower the heat to low and let it simmer, stirring every now and then, for about 10 to 12 minutes, or until the pasta is done and most of the liquid has been absorbed. After it's done cooking, take it off the heat and add the grated Parmesan cheese. If you want, you can serve it hot with extra Parmesan cheese and fresh basil on top.
