This vinegar with lemon in it gives any food or drink a burst of citrus flavor. You can use it to give summer salads, marinades, or even cocktails a zesty kick. You only need two easy-to-find ingredients and some time to make a summery condiment that can be used in many ways.
Ingredients: 2 cups white vinegar. 2 lemons, thinly sliced.
Instructions: In a clean glass jar, place the lemon slices. Heat the white vinegar in a saucepan over medium heat until it reaches a simmer. Pour the hot vinegar over the lemon slices in the jar, covering them completely. Allow the mixture to cool to room temperature. Seal the jar tightly and store it in a cool, dark place for at least 2 weeks, shaking occasionally. After 2 weeks, strain the vinegar through a fine mesh sieve or cheesecloth to remove the lemon slices. Transfer the lemon-infused vinegar to a clean glass bottle or jar for storage. Use in salad dressings, marinades, or as a refreshing drink mixer!
