This vegan take on grilled corn will take your barbecue to a whole new level. When you mix sour lime, sweet cilantro, and smoky paprika with creamy coconut oil, you get a dish that is perfect for summer parties.
Ingredients: 4 ears of corn, husked. 2 tablespoons coconut oil, melted. 1/4 cup fresh cilantro, chopped. 2 limes, juiced. 1 teaspoon paprika. Salt and pepper to taste.
Instructions: Preheat the grill to medium-high heat. Brush each ear of corn with the melted coconut oil, ensuring they are well-coated. In a small bowl, mix together the chopped cilantro, lime juice, paprika, salt, and pepper to create a marinade. Generously brush each corn with the cilantro-lime marinade, ensuring an even distribution of flavors. Place the corn on the preheated grill and cook for 10-12 minutes, turning occasionally, until the kernels are tender and have a nice char. Remove the corn from the grill and brush with any remaining marinade for an extra burst of flavor. Serve hot and enjoy your Vegan Grilled Cilantro, Lime, and Paprika Corn on the Cob!
