This is a simple stir-fry recipe that makes tasty and nourishing dinner out of leftover chicken.
Ingredients: 2 cups leftover chicken, shredded. 1 bell pepper, sliced. 1 cup broccoli florets. 1/2 cup sliced carrots. 3 cloves garlic, minced. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon sesame oil. 1/2 teaspoon ginger, minced. 1/4 teaspoon red pepper flakes optional. 2 tablespoons vegetable oil. Salt and pepper to taste.
Instructions: Heat vegetable oil in a wok or large skillet over high heat. Add minced garlic and ginger, and stir-fry for 30 seconds. Add sliced bell pepper, broccoli, and carrots. Stir-fry for 3-4 minutes until vegetables are tender-crisp. Add shredded leftover chicken to the pan and stir-fry for an additional 2-3 minutes. In a small bowl, mix together soy sauce, oyster sauce, sesame oil, and red pepper flakes if using. Pour the sauce over the chicken and vegetables. Stir-fry for another 2 minutes, or until everything is well coated and heated through. Season with salt and pepper to taste. Serve hot and garnish with your favorite herbs or sesame seeds if desired.
