Ingredients: 4 large eggs. 1/4 cup of diced bell peppers. 1/4 cup of diced tomatoes. 2 tablespoons of chopped fresh herbs e.g., basil, parsley. Salt and pepper to taste. 2 tablespoons of grated Parmesan cheese. Olive oil for sauting.
Instructions: Boil the eggs until they are hard-boiled, around 10-12 minutes. Then, cool them in cold water, peel, and cut them in half lengthwise. Carefully remove the yolks and place them in a bowl. Mash the yolks with a fork. In a separate bowl, combine the diced bell peppers, diced tomatoes, chopped fresh herbs, and season with salt and pepper. Mix the mashed yolks with the vegetable mixture and add grated Parmesan cheese to create a flavorful filling. Spoon the filling into the egg white halves, creating a generous mound on each one. Heat a small amount of olive oil in a pan over medium heat. Place the stuffed egg halves in the pan and cook for a few minutes until they are lightly browned and heated through. Serve the stuffed eggs hot and garnish with extra herbs and grated Parmesan cheese, if desired.
