Ingredients: 4 large eggs. 1 tablespoon olive oil. 1 cup cherry tomatoes, halved. 2 tablespoons fresh basil, chopped. 4 ounces fresh mozzarella, diced. Salt and pepper to taste.
Instructions: Set a pan on medium heat and add the olive oil. Put cherry tomatoes in the pan and cook for about two minutes, until they start to get a little soft. Add the eggs to a bowl and whisk them together. Add salt and pepper to taste. The eggs should be added to the pan with the tomatoes after being whisked.
