Ingredients: 4 large eggs. 8 slices of bread. 8 slices of brie cheese. 8 slices of maple bacon. 2 cups fresh spinach leaves. 2 tablespoons butter. Salt and pepper to taste.
Instructions: Cook the maple bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. In the same skillet, melt 1 tablespoon of butter over medium heat. Add the fresh spinach leaves and saut until wilted. Season with salt and pepper. Remove and set aside. In a separate skillet, melt the remaining 1 tablespoon of butter over medium-low heat. Crack the eggs into the skillet and cook them to your desired level of doneness. You can either make scrambled eggs or sunny-side-up eggs. While the eggs are cooking, toast the slices of bread.
