These tasty and filling black bean and lime burgers are a great vegetarian choice. Tight with protein and bursting with lime flavor, they're a tasty and nutritious take on classic beef burgers.
Ingredients: 2 cans 15 oz each black beans, drained and rinsed. 1/2 cup breadcrumbs. 1/4 cup red onion, finely chopped. 2 cloves garlic, minced. 1/4 cup cilantro, chopped. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. Zest of 1 lime. Juice of 1 lime. 1 egg, beaten. 4 whole wheat burger buns. Your favorite burger toppings lettuce, tomato, avocado, etc..
Instructions: In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but with some chunks remaining. Add breadcrumbs, red onion, garlic, cilantro, cumin, chili powder, paprika, salt, pepper, lime zest, lime juice, and beaten egg to the mashed beans. Mix until well combined. Divide the mixture into 4 equal portions and shape each portion into a patty. Heat a grill or skillet over medium heat and cook the black bean burgers for about 4-5 minutes per side, or until they are heated through and have a nice crust on the outside. Toast the whole wheat burger buns on the grill or in a toaster. Assemble the burgers by placing each black bean patty on a bun and adding your favorite toppings. Serve the Black Bean Lime Burgers with a side of sweet potato fries or a fresh salad. Enjoy your delicious and nutritious plant-based burger!
