Ingredients: 1 lb shrimp, peeled and deveined. 2 ripe avocados, sliced. 1/4 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 2 tbsp olive oil. 2 cloves garlic, minced. 1 tsp chili powder. 1/2 tsp cumin. Salt and pepper to taste. 4 large lettuce leaves, for serving. Lime wedges, for serving. Fresh cilantro, for garnish.
Instructions: In a large bowl, toss shrimp with olive oil, minced garlic, chili powder, cumin, salt, and pepper. Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until they turn pink and opaque. Once cooked, remove shrimp from the skillet and set aside. To assemble tacos, place avocado slices on each lettuce leaf. Top with cooked shrimp, cherry tomatoes, and red onion slices. Squeeze fresh lime juice over the tacos and garnish with fresh cilantro. Serve immediately and enjoy!
