It’s cold outside today (it snowed), but there’s no need for me to be cold inside. Might as well make a hearty meal. I don’t like spaghetti because I hate tomato sauce, but I do like tomatoes so I made turkey meatballs and roasted cherry tomatoes over a bed of roasted spaghetti squash. Italian seasoning (dried thyme, marjoram, basil, and oregano) 1 tsp. crushed red pepper flake, more if desired 1 tsp. salt 1 tsp. white pepper 1 tsp. fresh parsley, chopped 1 tsp. fresh cilantro, chopped 1 tsp. fresh basil, chopped 1 egg 1/4 c. almond flour 2 cloves chopped garlic 1 pint cherry tomatoes 1 tbsp. EVOO 1 tsp. Italian seasoning 1/2 tsp. fresh parsley 1/2 tsp. fresh basil 1 clove chopped garlic 1 spaghetti squash EVOO Salt and pepper Directions: Preheat oven to 400°F and line a baking sheet with parchment paper. On a cutting board, cut the ends off of the spaghetti squash. Cut the spaghetti squash in half, lengthwise. Season flesh side with olive oil, salt, and pepper. Place flesh side down on parchment paper and place in the oven for 30-45 mins depending on desired level on roastedness (that’s not actually a word). In a medium bowl combine all the ingredients for the meatballs with your hand. Form nice sized meatballs (should yield 6-8) and place on another parchment lined baking sheet. Drizzle with olive oil. Once spaghetti squash is done remove from oven and remove the flesh with a fork. Place meatballs in the oven for 20 minutes. While meatballs are in the oven combine all the ingredients for the tomatoes. After 20 minutes remove the meatballs from the oven and turn them over. Place the tomatoes on the same baking sheet around the meatballs. Return the pan to the oven for 10 minutes or until the meatballs reach an internal temperature of 165°F and the tomatoes begin to split. Plate it and eat good!

Oh my god. This shepherd's pie from @perchancetocook is PHENOMENAL. I switched it up a bit by roasting the cauliflower and adding ghee when I was mashing the cauliflower and potatoes together. I also left out the diced tomatoes in the beef. I made sausage egg "mcmuffins" for breakfast this week, but instead of English muffins, I used eggs as a bun! I also made my own chicken apple sausage thanks to a recipe from @paleorunningmomma. This quick and simple Paleo stir-fry of chicken and veggies is a tasty and nourishing meal. This dish is ideal for anyone following a Paleo lifestyle because it is full of protein from the chicken and lots of vitamins and minerals from the vibrant assortment of vegetables.
Ingredients: 2 tbsp coconut oil. 1 lb chicken breast, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 small onion, sliced. 3 cloves garlic, minced. 1-inch piece of ginger, grated. 1/4 cup coconut aminos. 2 tbsp apple cider vinegar. 1 tsp arrowroot powder. Salt and pepper, to taste. Optional: sesame seeds and green onions for garnish.
Instructions: Combine arrowroot powder, apple cider vinegar, and coconut aminos in a small bowl. Put aside. Heat the coconut oil in a big skillet or wok over medium-high heat. After adding the chicken slices, cook for 5 to 6 minutes, or until browned. Take out and set aside the chicken from the skillet. If necessary, add extra coconut oil to the same skillet and add the onion, bell peppers, and broccoli. Stir-fry the vegetables for 45 minutes, or until they are crisp-tender. Cook the grated ginger and minced garlic in the skillet for one to two more minutes, or until fragrant. Place the cooked chicken back in the skillet with the vegetables, and cover the chicken with the prepared sauce. To evenly coat everything, give it a good stir. Simmer for a further two to three minutes, or until the sauce has slightly thickened and the food is thoroughly cooked. To taste, add salt and pepper for seasoning. If desired, garnish with chopped green onions and sesame seeds. Enjoy while hot!

These Paleo Portobello Fajitas are a delicious and healthy alternative to traditional fajitas. Packed with flavor from spices and veggies, they are served in lettuce wraps for a grain-free, low-carb option.
Ingredients: 4 large portobello mushrooms, stems removed and sliced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, sliced. 2 cloves garlic, minced. 2 tbsp olive oil. 1 tsp chili powder. 1 tsp cumin. 1/2 tsp smoked paprika. Salt and pepper to taste. Juice of 1 lime. 8-10 lettuce leaves, for serving.
Instructions: Sliced portobello mushrooms, bell peppers, onions, and minced garlic should all be well coated after being tossed in a big bowl of olive oil, chili powder, cumin, smoked paprika, and salt and pepper. Heat a sizable skillet to medium-high temperature. After adding the seasoned veggies to the skillet, cook for 8 to 10 minutes, stirring now and then, or until the vegetables are soft and starting to brown. After the food is cooked, add the lime juice to the fajita mixture and mix well. Spoon the fajita mixture onto a lettuce leaf, then roll it up like a taco to serve. Savor your Portobello Fajitas on the Paleo diet!
