This Beet Tart with Goat Cheese is a delightful combination of sweet roasted beets and creamy goat cheese on a flaky puff pastry crust. It's an elegant yet simple dish that's perfect for a light lunch or appetizer.
Ingredients: 1 sheet frozen puff pastry, thawed. 2 medium beets, peeled and thinly sliced. 4 ounces goat cheese, crumbled. 2 tablespoons olive oil. 1 tablespoon honey. 2 teaspoons fresh thyme leaves. Salt and pepper to taste.
Instructions: Turn on the oven and heat it up to 400F 200C. Put some flour on a surface and roll out the puff pastry until it fits into a tart pan. Put the puff pastry in the tart pan and cut off any extra dough. Place the beet slices on top of the dough in a way that they overlap. Spread out the crumbled goat cheese on top of the beets. Put honey and olive oil on top of the tart. Add salt and pepper to the tart along with fresh thyme leaves. For 25 to 30 minutes, or until the pastry is golden brown and the beets are soft, bake in an oven that has already been heated up. Let it cool down a bit before you serve. Cut it up and enjoy!
