This baby beet tarte tatin combines the earthy sweetness of baby beets with the tangy richness of goat cheese, all encased in flaky puff pastry. It's a delightful twist on the classic French dessert, perfect for showcasing the vibrant flavors of seasonal produce.
Ingredients: 250g baby beets, peeled and halved. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 tablespoon honey. Salt and pepper to taste. 1 sheet puff pastry, thawed. 100g goat cheese, crumbled. Fresh thyme leaves for garnish.
Instructions: Preheat oven to 200C 400F. In a bowl, toss baby beets with olive oil, balsamic vinegar, honey, salt, and pepper until well coated. Transfer the coated beets to a baking dish and roast in the preheated oven for 20-25 minutes or until tender. Meanwhile, roll out the puff pastry sheet to fit the size of your baking dish. Once the beets are roasted, arrange them evenly in the bottom of the baking dish. Sprinkle crumbled goat cheese over the beets. Carefully place the puff pastry over the top, tucking in the edges. Prick the pastry with a fork to allow steam to escape during baking. Bake in the oven for 25-30 minutes or until the pastry is golden brown and crisp. Remove from the oven and let it cool for a few minutes. Invert the tarte onto a serving plate, allowing the beets and goat cheese to be on top. Garnish with fresh thyme leaves before serving.
