Ingredients: 4 beef short ribs. 1 bottle red wine. 2 cups beef broth. 1 onion, diced. 4 cloves garlic, minced. 2 carrots, diced. 2 stalks celery, diced. 2 sprigs fresh thyme. 2 bay leaves. Salt and pepper to taste. 4 large potatoes, peeled and cubed. 1/2 cup milk. 4 tablespoons butter. Salt and pepper to taste.
Instructions: Preheat oven to 350F 175C. Season short ribs with salt and pepper. In a large Dutch oven, sear short ribs on all sides until browned. Remove and set aside. In the same pot, saut onion, garlic, carrots, and celery until softened. Deglaze the pot with red wine, scraping up any browned bits from the bottom. Add beef broth, thyme, and bay leaves. Return short ribs to the pot. Cover and transfer to the oven. Braise for 2-3 hours, until meat is tender and falling off the bone. Meanwhile, cook the potatoes in a pot of salted boiling water until tender. Drain. Mash the potatoes with milk, butter, salt, and pepper until smooth and creamy. Serve the braised short ribs over garlic mashed potatoes, spooning the sauce over the top.
