Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/2 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. 4 nori seaweed sheets. Assorted seafood such as tuna, salmon, crab sticks. Vegetables such as cucumber, avocado, carrots. Soy sauce, for dipping. Wasabi, for serving. Pickled ginger, for serving.
Instructions: Rinse the sushi rice in cold water until the water runs clear. Drain well. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 18-20 minutes, or until the rice is tender and the water is absorbed. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over medium heat until the sugar and salt are dissolved. Remove from heat. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture until well combined. Let the rice cool to room temperature. Place a sheet of nori on a clean work surface, shiny side down. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border along the top edge. Arrange your choice of seafood and vegetables in a line across the center of the rice. Using a bamboo sushi mat or your hands, tightly roll the nori sheet from the bottom up, pressing gently to seal the edge. Slice the sushi roll into bite-sized pieces using a sharp knife. Repeat with the remaining nori sheets and fillings. Serve the homemade sushi rolls with soy sauce, wasabi, and pickled ginger.
