This Paleo-friendly recipe for parchment salmon with herb butter is not only delicious but also incredibly easy to prepare. The salmon is seasoned with simple ingredients and then topped with a flavorful herb butter mixture before being baked in parchment paper packets, which helps to seal in moisture and flavor. The result is tender, moist salmon infused with the savory goodness of garlic, parsley, dill, and chives, with a hint of citrus from the lemon slices. It's a perfect dish for a quick weeknight dinner or a special occasion.
Ingredients: 4 salmon fillets. Salt and pepper to taste. 4 tablespoons grass-fed butter, softened. 2 cloves garlic, minced. 2 tablespoons chopped fresh parsley. 1 tablespoon chopped fresh dill. 1 tablespoon chopped fresh chives. 1 lemon, thinly sliced.
Instructions: Preheat the oven to 400F 200C. Season the salmon fillets with salt and pepper on both sides. In a small bowl, mix together the softened butter, minced garlic, chopped parsley, dill, and chives until well combined. Cut four large squares of parchment paper. Place each salmon fillet on a parchment paper square, and spread a generous portion of the herb butter mixture over the top of each fillet. Top each fillet with a couple of slices of lemon. Fold the parchment paper over the salmon to create a packet, sealing the edges tightly. Place the packets on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Carefully open the parchment paper packets, and serve the salmon hot.
