Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 2 cups white chocolate chips. 20 soft caramel candies, unwrapped.
Instructions: Preheat the oven to 350F 175C. Line a baking sheet with parchment paper. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the white chocolate chips. Scoop a tablespoon of cookie dough and flatten it slightly in your hand. Place a caramel candy in the center and wrap the dough around it, forming a ball. Repeat with the remaining dough and caramels. Place the stuffed cookie dough balls onto the prepared baking sheet, leaving space between them to allow for spreading. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
