This chocolate chip coconut banana bread is vegan and gluten-free, and it's delicious. It's great for breakfast or as a sweet snack.
Ingredients: 2 ripe bananas, mashed. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1 cup gluten-free all-purpose flour. 1/2 cup almond flour. 1/4 cup shredded coconut. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup vegan chocolate chips.
Instructions: Set the oven to 350F 175C and heat it up. Either grease or line a loaf pan with parchment paper. Put mashed bananas, melted coconut oil, maple syrup, and vanilla extract in a large bowl. Blend together almond flour, shredded coconut, baking powder, baking soda, and salt. Then add gluten-free all-purpose flour. Mix everything together well. Add vegan chocolate chips and mix well. Spread out the batter in the loaf pan that has been prepared. Put it in the oven and bake for 45 to 50 minutes, or until a toothpick stuck in the middle comes out clean. The banana bread should cool in the pan for 10 minutes before being moved to a wire rack to cool all the way down. Cut and serve. Have fun!
