Ingredients: 2 sheets of matzo. 4 large eggs. Salt and pepper to taste. 2 tablespoons of butter or oil. Optional toppings: sour cream, applesauce.
Instructions: Break the matzo sheets into small pieces and place them in a bowl. Add enough warm water to the bowl to cover the matzo pieces. Let them soak for about 2 minutes, then drain and squeeze out excess water. In another bowl, whisk the eggs and season with salt and pepper. Add the soaked matzo pieces to the beaten eggs and mix well to combine. Heat the butter or oil in a skillet over medium-high heat. Pour the matzo and egg mixture into the skillet and spread it out evenly. Cook for about 3-5 minutes on each side, or until it's golden brown and crispy. Serve hot with optional toppings like sour cream or applesauce.
