These gluten-free grilled veggie skewers are the perfect addition to your summer BBQ menu. Packed with vibrant colors and flavors, they are easy to make and satisfy everyone, whether they follow a gluten-free diet or not.
Ingredients: 1 large zucchini, sliced. 1 large red bell pepper, cut into chunks. 1 large yellow bell pepper, cut into chunks. 1 large red onion, cut into chunks. 1 pint cherry tomatoes. 1/4 cup olive oil. 2 cloves garlic, minced. 2 tablespoons fresh lemon juice. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Warm the grill up to a medium-high level. Mix olive oil, lemon juice, dried oregano, salt, and pepper in a small bowl with a whisk. Put cherry tomatoes, bell pepper chunks, red onion chunks, and zucchini slices on skewers. Brush the skewers with the olive oil mixture that you just made. For 8 to 10 minutes, turning the skewers every now and then, grill the vegetables until they are soft and slightly charred. Enjoy while it's still hot from the grill!
