An old favorite, this Best-Ever Creamy Macaroni Salad has a dressing that is both creamy and sour. It's full of fresh veggies, hard-boiled eggs, and macaroni that's just right. It's great for picnics, BBQs, and as a side dish for any event.
Ingredients: 2 cups elbow macaroni. 1/2 cup mayonnaise. 2 tablespoons sour cream. 1 tablespoon Dijon mustard. 1 tablespoon apple cider vinegar. 1 teaspoon sugar. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup diced red bell pepper. 1/2 cup diced celery. 1/4 cup diced red onion. 1/4 cup diced dill pickles. 2 hard-boiled eggs, chopped. 2 tablespoons fresh parsley, chopped.
Instructions: Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water. Let it cool completely. In a large mixing bowl, combine mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper. Mix until smooth. Add the cooked and cooled macaroni to the dressing and toss to coat evenly. Add diced red bell pepper, celery, red onion, dill pickles, chopped hard-boiled eggs, and fresh parsley to the macaroni mixture. Gently fold everything together until well combined. Refrigerate the macaroni salad for at least 2 hours before serving to allow the flavors to meld. Serve chilled and enjoy!
