Carrot bread / cake, with a few adjustments from the original recipe from @the_bojon_gourmet https://bojongourmet.com/dairy-free-gluten-free-carrot-cake/ My alterations : ▫️No sugar ▫️Instead of millet flour I used oats. ▫️I added in dates instead of raisins or nuts. Ingredients: about 4 medium carrots (1¼ cups packed) 3 large eggs ½ cup sunflower oil (or other neutral vegetable oil) ½ cup (75 g) rice flour ½ cup (50 g) gluten-free oat flour ¼ cup + 2 TBsp (50 g) gluten free oats 2 TBsp (14 g) tapioca flour 1 ½ tsp baking powder ½ tsp baking soda ½ tsp fine sea salt ½ tsp ground cinnamon ½ tsp ground ginger ½ cup (50 g) chopped dates Mix dry ingredients in a bowl. Mix wets in a bowl. Combine well, put into a well greased baking pan & bake at preheated 180 degrees for about 22 to 25 minutes. Topping of your choice, but here I sprinkled white chocolate over. Let the cake cool for 20min in the pan before removing it. Rich and easy Apple Protein Muffin. This is the stuff that keeps we awake at night to create it in my mind and then I hope this recipe will work out next day..... Well it did! 1) Cook for 5 – 10 minutes 🔸2 Granny Smith Apples 🔸5 drops Sweet Drops Stevia (or honey if you prefer) 🔸2 tbsp cinnamon 2) Blend 🔸2 Egg whites 🔸4 whole Eggs 🔸2 scoops Iso-Whey Vanilla 🔸1 tsp Baking powder 🔸2 tbsp Vanilla Essence 3) Final topping 🔸10 crushed Almonds 🔸4 tsp cacao nips 🍏Cook the apples in cinnamon, stevia drops in some water till they are nice and soft, about 5-10 min. 🍏Blend the rest (except Almonds & Cacao Nips) in a blender. Once the apples cooled a bit, add it to the egg mixture and blend till the desired texture has been reached (about 1 minute). 🍏Pour the liquid batter to a muffin baking tray (sprayed with Cook n’ Spray). Sprinkle the almonds and cacao nips over. Bake for 15 – 20 minutes or until the tooth prick test confirms they are done. HOMEMADE : RED VELVET PROTEIN BARS 🔸2 large cooked red beets 🔸2 tbsp coconut flour 🔸2 scoops casein protein 🔸1/3 cup almond milk (unsweetened vanilla) 🔸1 biggish tbsp peanut butter 🔸Dark chocolate Optional add seeds or crushed nuts. 🥜First blend the beets with almond milk and then add rest except chocolate. If consistency is sticky, then mould into desired shape, size & thickness. Pour molten chocolate over bars & refrigerate for 30 min. Dasei! 🥜If the bars feel to moist, add a teaspoon of coconut flour.
