Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. Chocolate chips for bunny eyes. Sliced strawberries for bunny noses. Whipped cream for bunny tails. Maple syrup for serving.
Instructions: Put the all-purpose flour, sugar, baking powder, baking soda, and salt in a large bowl. Add the egg, melted butter, vanilla extract, and buttermilk to a different bowl, and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix the batter too much; it's okay if there are some lumps. Warm up a griddle or nonstick skillet over medium heat, and use cooking spray or more melted butter to lightly coat it. For every bunny pancake, put 1/4 cup of pancake batter on the griddle. Put two bunny ears on top of the oval shape you made with the back of a spoon. While the first side cooks, give each pancake two chocolate chips for eyes and a strawberry slice for a nose. It will take about two to three minutes for bubbles to appear on top of the pancakes. Carefully flip them over and cook for another one to two minutes, or until golden brown. Take the pancakes off the griddle and give them a minute or two to cool down. When you're ready to serve, make the bunny's tail out of whipped cream and drizzle it with maple syrup.
