This slow cooker recipe is a tasty and vegan-friendly version of Chipotle's Sofritos. It has braised tofu with a mix of spices and vegetables.
Ingredients: 1 block extra-firm tofu, pressed and cubed. 1 cup diced onions. 1 cup diced bell peppers any color. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes, undrained. 1/4 cup tomato paste. 1/4 cup vegetable broth. 2 tablespoons olive oil. 1 tablespoon ground cumin. 1 tablespoon chili powder. 1 teaspoon dried oregano. 1 teaspoon smoked paprika. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: In a slow cooker, combine tofu, onions, bell peppers, and garlic. In a separate bowl, mix diced tomatoes, tomato paste, vegetable broth, olive oil, cumin, chili powder, oregano, smoked paprika, salt, and pepper. Pour this mixture over the tofu and vegetables in the slow cooker. Stir everything well to ensure the tofu and vegetables are coated with the sauce. Cover and cook on low for 4-6 hours or until tofu is tender and flavors meld together. Before serving, garnish with fresh cilantro. Serve over rice or in tortillas for a Chipotle Sofritos bowl or burrito.
