These simple pantry tacos with Beyond Beef are a quick and tasty way to use up food from the pantry and make plant-based meat. Great for dinner during the week or as an alternative to traditional tacos without meat.
Ingredients: 1 lb Beyond Beef or any plant-based ground meat. 1 packet taco seasoning mix. 1 can 15 oz black beans, drained and rinsed. 1 cup cooked rice. 1 cup salsa. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup shredded vegan cheese. 8 taco shells or tortillas. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: Warm up the olive oil in a big pan over medium-high heat. Break up the Beyond Beef with a spoon as it cooks until it turns brown. Add the black beans and taco seasoning mix and mix well. Heat through for two to three minutes. Put the cooked rice and salsa in a different bowl. Follow the directions on the package to warm up taco shells or tortillas. Put a spoonful of the rice and salsa mixture into each taco shell to make a stack. Put the Beyond Beef and black bean mix on top. On top, put vegan cheese, diced tomatoes, diced red onion, and shreds of lettuce. Add pepper and salt to taste. Serve right away and enjoy your easy Beyond Beef tacos from the pantry!
