A low carb twist on the classic Chicken Cordon Bleu, this casserole is packed with flavor from tender chicken, savory ham, and gooey Swiss cheese, all baked together in a creamy sauce. The almond flour and Parmesan cheese topping adds a delicious crunch without the carbs.
Ingredients: 2 cups cooked chicken, diced. 1 cup cooked ham, diced. 1 cup Swiss cheese, shredded. 1/2 cup mayonnaise. 1/4 cup heavy cream. 1/4 cup chicken broth. 1 tablespoon Dijon mustard. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon black pepper. 1/4 teaspoon salt. 1/4 cup almond flour. 2 tablespoons grated Parmesan cheese.
Instructions: Preheat oven to 350F 175C. In a large bowl, combine cooked chicken, ham, and Swiss cheese. In a separate bowl, whisk together mayonnaise, heavy cream, chicken broth, Dijon mustard, garlic powder, onion powder, black pepper, and salt. Pour the mixture over the chicken, ham, and cheese, and stir until well combined. Transfer the mixture to a greased baking dish. In a small bowl, mix almond flour and Parmesan cheese. Sprinkle the almond flour mixture evenly over the top of the casserole. Bake for 25-30 minutes, or until the casserole is heated through and the top is golden brown. Serve hot and enjoy!
