Ingredients: 1 box of white cake mix. 1/2 cup key lime juice. 1/2 cup vegetable oil. 3 large eggs. 1 tablespoon grated lime zest. 1/2 cup sour cream. 1/2 cup milk. Green food coloring optional. 1 cup powdered sugar. 2 tablespoons key lime juice. 1 tablespoon melted butter. 1 teaspoon grated lime zest. 1-2 drops green food coloring optional. Whipped cream and lime slices for garnish.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Place the cake mix, 1/2 cup of key lime juice, vegetable oil, eggs, grated lime zest, sour cream, and milk in a large bowl. Mix everything together well. Want a brighter green color Add a few drops of green food coloring. The batter should be about two thirds of the way up each cupcake liner. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Get the key lime glaze ready while the cupcakes are baking. Put the powdered sugar, 2 tablespoons of key lime juice, melted butter, grated lime zest, and one or two drops of green food coloring into a small bowl. Together, mix them well.
