Ingredients: 2 medium sweet potatoes, peeled and cubed. 1 onion, finely chopped. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 cup frozen green peas. 1 can 400ml coconut milk. 1/4 cup smooth peanut butter. 2 tbsp soy sauce. 1 tbsp maple syrup or coconut sugar. 1 tbsp curry powder. 1 tsp ground ginger. 1/4 tsp cayenne pepper optional, for heat. Salt to taste. Chopped fresh cilantro, for garnish. Cooked rice, for serving.
Instructions: Put some oil in a big pot or skillet and heat it over medium-low heat. Put in the chopped onion and cook for about 5 minutes, until it gets soft. Cut up the garlic and add it. Cook for one more minute. Add the red bell pepper, frozen peas, and sweet potatoes and mix them in. Mix in the peanut butter, soy sauce, maple syrup, curry powder, ginger, salt, and cayenne pepper if using. Then add the coconut milk. Simmer the food for a while, then turn down the heat and cover the pot or skillet. It will take about 15 to 20 minutes of stirring every now and then until the sweet potatoes are soft. When the sweet potatoes are soft, check the seasoning and make any necessary changes. Put cooked rice on the plate and top it with chopped fresh cilantro.
