A hearty and soothing slow cooker chicken dumpling soup, perfect for chilly days and providing the ultimate comfort.
Ingredients: 1 lb boneless, skinless chicken thighs, diced. 1 cup carrots, sliced. 1 cup celery, diced. 1 cup onion, chopped. 2 cloves garlic, minced. 4 cups chicken broth. 1 tsp dried thyme. 1 tsp dried rosemary. 1/2 tsp black pepper. 1 cup frozen peas. 1 cup all-purpose flour. 2 tsp baking powder. 1/2 tsp salt. 1/2 cup milk. 2 tbsp unsalted butter, melted.
Instructions: In a slow cooker, combine chicken, carrots, celery, onion, garlic, chicken broth, thyme, rosemary, and black pepper. Cover and cook on low for 6-8 hours or until chicken is tender. In the last hour of cooking, add frozen peas to the slow cooker. In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter to form a dough. Drop spoonfuls of the dough onto the simmering soup. Cover and cook for an additional 30 minutes until dumplings are cooked through. Serve hot and enjoy the comforting Chicken Dumpling Soup!

Ingredients: 1 whole chicken, cut into pieces. 2 cups all-purpose flour. 2 teaspoons baking powder. 1 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1 cup milk. 4 cups chicken broth. 2 cups water. 2 carrots, diced. 2 celery stalks, diced. 1 onion, diced. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 bay leaf. Salt and pepper to taste.
Instructions: In a large bowl, mix together flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk until a dough forms. Roll out dough on a floured surface and cut into dumplings. In a large pot, combine chicken broth, water, carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper. Add chicken pieces to the pot and bring to a boil. Reduce heat and simmer for 30 minutes or until chicken is cooked through. Drop dumplings into the pot and simmer for an additional 15-20 minutes, until dumplings are cooked through and tender. Discard bay leaf and serve hot.

Ingredients: 1 whole chicken about 3-4 pounds, cut into pieces. 4 cups chicken broth. 2 cups all-purpose flour. 1/2 cup milk. 2 tablespoons butter. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon dried thyme. 1/2 teaspoon dried rosemary. 1/2 cup frozen peas. 1/2 cup frozen carrots. 1/2 cup frozen corn. 1/2 cup chopped celery. 1/2 cup chopped onion. 2 cloves garlic, minced.
Instructions: In a large pot, melt the butter over medium-high heat. Add the chopped onion, celery, and garlic. Saut until they become translucent. Add the chicken pieces and brown them on all sides. Pour in the chicken broth and add the thyme, rosemary, salt, and pepper. Bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes, or until the chicken is cooked through and tender. While the chicken is cooking, prepare the dumplings. In a mixing bowl, combine the flour and milk to form a dough. Turn the dough out onto a floured surface and roll it out to about 1/4-inch thickness. Cut the dough into small squares or circles, approximately 2 inches in size. After the chicken is cooked, remove it from the pot and shred it into bite-sized pieces using two forks. Return the shredded chicken to the pot and add the frozen peas, carrots, corn, and additional seasonings if desired. Drop the dumpling pieces into the simmering broth. Cover the pot and cook for an additional 15-20 minutes, or until the dumplings are cooked through and tender. Serve hot, garnished with fresh herbs if desired.
