Ingredients: 300g smoked tofu, finely diced. 1 small onion, finely chopped. 2 cloves garlic, minced. 1/2 cup breadcrumbs. 2 tablespoons nutritional yeast. 1/4 cup chopped fresh parsley. 1/4 cup all-purpose flour. 1/4 teaspoon paprika. 1/4 teaspoon cumin. Salt and pepper to taste. 2 tablespoons olive oil for frying.
Instructions: In a large bowl, combine the diced smoked tofu, chopped onion, minced garlic, breadcrumbs, nutritional yeast, chopped parsley, flour, paprika, cumin, salt, and pepper. Mix well until everything is evenly combined. Form the mixture into small patties or fritters, pressing firmly to ensure they hold their shape. Heat the olive oil in a large skillet over medium heat. Once hot, add the tofu fritters to the skillet in batches, making sure not to overcrowd the pan. Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy. Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve the smoked tofu fritters hot, garnished with additional chopped parsley if desired. Enjoy!
