Chicken florentine soup that is hearty and tastes great. It has spinach, beans, and fragrant herbs in it. Great for a quick and easy meal that will warm you up.
Ingredients: 1 lb boneless, skinless chicken breasts, cooked and shredded. 1 onion, finely chopped. 3 cloves garlic, minced. 1 tbsp olive oil. 6 cups chicken broth. 1 can 14 oz diced tomatoes, undrained. 1 can 14 oz cannellini beans, drained and rinsed. 1 cup frozen spinach, chopped. 1 tsp dried basil. 1/2 tsp dried oregano. Salt and pepper to taste. 1/2 cup grated Parmesan cheese. 1/2 cup heavy cream.
Instructions: In a large pot, saut the chopped onion and minced garlic in olive oil until softened. Add the shredded chicken, chicken broth, diced tomatoes, cannellini beans, chopped spinach, dried basil, dried oregano, salt, and pepper to the pot. Simmer the soup over medium heat for 20 minutes, allowing the flavors to meld. Stir in the grated Parmesan cheese and heavy cream, and continue to simmer for an additional 5 minutes until the soup is heated through. Adjust seasoning to taste and serve hot.

Ingredients: 1 lb Cajun-style smoked ham, cubed. 1 package 20 oz 15-bean soup mix, rinsed and drained. 1 onion, chopped. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 6 cups chicken broth. 1 bell pepper, chopped. 2 celery stalks, chopped. 2 tsp Cajun seasoning. Salt and pepper to taste.
Instructions: Put everything in a slow cooker and mix them together. For 8 to 10 hours, or until the beans are soft, cover and cook on low heat. Before you serve, add salt and pepper to taste.

Ingredients: 1 lb turkey sausage, casings removed. 1 onion, chopped. 3 cloves garlic, minced. 4 cups chicken broth. 4 cups diced potatoes. 1 cup diced carrots. 1 cup diced celery. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 1 cup half-and-half or heavy cream. 2 tablespoons cornstarch. 2 tablespoons water. Chopped fresh parsley for garnish.
Instructions: Put the turkey sausage in a pan and cook it over medium-low heat until it's fully cooked. Get rid of extra fat. Cook the sausage and chop it up. Add the onion, garlic, chicken broth, diced potatoes, carrots, celery, thyme, and rosemary. Add pepper and salt. Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the vegetables are soft. Add heavy cream, cornstarch, and water to a bowl and whisk them together until smooth about 30 minutes before you serve. Add the mix to the slow cooker and stir it around. Put the lid on top and cook on high for another 30 minutes, until the soup gets a little thicker. Serve hot with fresh parsley chopped on top.
