Ingredients: 1 1/4 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 1/4 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 tsp peppermint extract. 1 cup buttermilk. 1/4 cup sour cream. 1/4 cup hot water. 1/2 cup semi-sweet chocolate chips. 1/2 cup crushed peppermint candies for garnish. 1 batch of chocolate ganache recipe below.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the cocoa powder, baking powder, baking soda, and salt in a medium-sized bowl with a whisk. Put away. The butter and sugar should be softened. In a large bowl, beat them together for about two minutes, until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. Put the peppermint and vanilla extracts in and mix them in. Add the dry ingredients and buttermilk to the butter mixture one at a time, beginning with the dry ingredients and ending with the buttermilk. Don't mix any further than that. Add the hot water and mix until the batter is well mixed. Then add the sour cream and mix until the batter is smooth. Add the semisweet chocolate chips and mix them in. Fill each cupcake liner about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Take the cupcakes out of the oven and let them cool for 5 minutes in the pan. Then, move them to a wire rack to cool completely. Making the chocolate ganache can be done once the cupcakes are very cool. Put some ganache on top of each cupcake and wait a minute for it to set. It looks nice to add crushed peppermint candies to the ganache while it's still wet. Before you serve, let the ganache fully set. Have a great time with your Chocolate Peppermint Cupcakes.
