Try a perfectly roasted pork shoulder that has been flavored with a zesty citrus mojo marinade. The flavors go well together and make a wonderful harmony. For an extra burst of freshness, serve it with a bright green sauce.
Ingredients: 1 pork shoulder roast 5-6 lbs. 2 oranges, juiced. 2 limes, juiced. 4 cloves garlic, minced. 1 teaspoon cumin powder. 1 teaspoon oregano. Salt and pepper to taste. 1/4 cup olive oil.
Instructions: Combine orange juice, lime juice, minced garlic, cumin powder, oregano, salt, and pepper in a bowl to create the citrus mojo marinade. Place the pork shoulder roast in a large resealable plastic bag and pour the citrus mojo marinade over it. Seal the bag, removing excess air, and marinate in the refrigerator for at least 4 hours or overnight. Preheat the BBQ to medium-high heat around 350F/175C. Remove the marinated pork shoulder roast from the bag and let it come to room temperature for about 30 minutes. Drizzle the olive oil over the roast and rub it to coat evenly. Place the pork on the BBQ and sear on all sides until a golden crust forms. Reduce the heat to medium-low, close the lid, and continue cooking for 4-5 hours or until the internal temperature reaches 195-200F 90-93C. Let the roast rest for 20-30 minutes before carving. Serve slices of the Citrus Mojo Pork Shoulder Roast with Green Sauce on the side.
