Ingredients: 2 cups grated zucchini. 1 cup grated carrots. 1 cup diced bell peppers. 1 cup chopped spinach. 8 eggs. 1/2 cup milk. 1 cup shredded cheese. 1 teaspoon salt. 1/2 teaspoon black pepper. 1 teaspoon garlic powder. 1 teaspoon onion powder. Cooking spray.
Instructions: Zest, carrots, bell peppers, and spinach should all be mixed together in a large bowl. Add the eggs, milk, salt, pepper, garlic powder, and onion powder to a different bowl and mix them together using a whisk. Put the egg mix on top of the vegetables and mix them well. Add the shreds of cheese. Some cooking spray should be put on the slow cooker. Put the whole thing in the slow cooker. Turn the heat down to low, cover, and cook for 4 to 5 hours, or until set. After it's done, let it cool down a bit before cutting it up into small pieces. Enjoy while still warm!
