Ingredients: 2 cups diced potatoes. 1 cup chopped carrots. 1 cup chopped celery. 1 cup chopped onion. 4 cups vegetable broth. 1 can 15 ounces diced tomatoes. 1 can 15 ounces kidney beans, drained and rinsed. 1 teaspoon dried thyme. 1 teaspoon dried oregano. 1 teaspoon paprika. Salt and pepper to taste.
Instructions: Put onion, carrots, celery, potatoes, diced tomatoes, and kidney beans in a large pot. Add vegetable broth and mix well. Salt and pepper should be added along with the dried oregano and thyme. Once the mixture starts to boil, lower the heat and let it cook for 20 to 25 minutes, or until the vegetables are soft. Enjoy while hot!
