This sandwich combines the rich flavors of prosciutto and eggs with a tangy tomato tarragon sauce, all sandwiched between slices of your favorite bread. It's a delightful blend of savory and fresh flavors that's perfect for breakfast, brunch, or any time of the day.
Ingredients: 4 slices prosciutto. 4 eggs. 4 slices bread of your choice. 2 tomatoes, diced. 2 tablespoons fresh tarragon, chopped. 1/4 cup mayonnaise. Salt and pepper to taste.
Instructions: Diced tomatoes, chopped tarragon, and mayonnaise should all be mixed together in a small bowl to make the tomato tarragon sauce. Add pepper and salt to taste. Set the pan on medium heat and cook the prosciutto slices for about two minutes on each side until they are crispy. Take it out of the pan and set it aside. Fry the eggs in the same pan until they are done the way you like them. Toast the pieces of bread. On one side of each piece of toasted bread, spread the tomato tarragon sauce. On half of the bread slices, put slices of prosciutto and fried eggs. Add the last few slices of bread on top to make sandwiches. Serve right away and enjoy!
