Fast, Light and Easy Breakfast
Here’s a vegan friendly, cruelty free healthy breakfast that will make your taste buds swoon. Toast vegan friendly bread preferably wholemeal and/or gluten free. Spread some margarine (if you wish to) over the toast. Use half or one whole avocado and fork down slices onto the bread. Dice fresh cherry tomatoes. On top sprinkle a little bit of Himalayan pink salt and if you wish to add a little more flavour drizzle organic olive oil but don’t overdo it. It’s meant to be a delicious subtle taste. Enjoy with fruits or fresh juice made at home with no added sugar or sweeteners.

These banana pancakes only need three ingredients and are quick, easy, and tasty. You can eat them for a healthy breakfast or brunch.
Ingredients: 2 ripe bananas. 2 large eggs. 1/4 teaspoon baking powder.
Instructions: Peel and mash the ripe bananas in a mixing bowl until smooth. Add the eggs and baking powder to the mashed bananas. Mix until well combined. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes, or until you see bubbles forming on the surface. Flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown and cooked through. Remove the pancakes from the skillet and serve warm. Optional: Top with maple syrup, sliced bananas, or your favorite pancake toppings.

Instructions: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay. Preheat a griddle or non-stick skillet over medium-high heat and lightly grease it with butter or oil. Pour 1/4 cup portions of the batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Serve hot with your favorite toppings.
