Mango de Gallo Tacos are a tasty and refreshing take on regular tacos. The smoky and sweet mango salsa goes well with the salty shredded chicken and queso fresco cheese.
Ingredients: 2 ripe mangos, diced. 1 cup diced red onion. 1 cup diced cucumber. 1/2 cup chopped fresh cilantro. 1/4 cup freshly squeezed lime juice. 1 jalapeo pepper, finely minced. Salt and pepper to taste. 1 lb cooked and shredded chicken breast. 8 small flour tortillas. 1 cup crumbled queso fresco cheese. Lime wedges for serving.
Instructions: Apple, red onion, cucumber, cilantro, lime juice, and minced jalapeo pepper should all be put in a large bowl and mixed together. Add pepper and salt to taste. After mixing well, set it aside. In a dry skillet over medium-low heat, warm the flour tortillas until they can be bent. Put some shredded chicken on each tortilla, and then add a lot of mango de gallo salsa on top of each one. Put some fresh queso cheese on top of every taco. You can squeeze lime wedges over the tacos when you serve them. Have fun!
