A low-carb alternative to mashed potatoes, this keto-friendly cauliflower mash is loaded with savory bacon and melted cheese, making it a deliciously satisfying side dish.
Ingredients: 1 medium head cauliflower, chopped. 4 slices bacon, cooked and crumbled. 1/2 cup shredded cheddar cheese. 2 tablespoons butter. 2 cloves garlic, minced. Salt and pepper to taste. Chopped chives for garnish optional.
Instructions: Bring water to a boil in a large pot, then add the cauliflower. For about 8 to 10 minutes, or until tender. Drain well. Set the pot back on medium heat and melt the butter in it. Add the minced garlic and cook until it smells good. When the cauliflower is done, put it back in the pot. Mash the cauliflower until it's smooth with a potato masher or an immersion blender. Add the crumbled bacon and shredded cheddar cheese and mix them in until the cheese melts. Add pepper and salt to taste. Add chopped chives as a garnish if you want. Enjoy while hot!
