Ingredients: 2 cups rolled oats. 1 teaspoon baking powder. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/4 cup honey or maple syrup. 1 cup milk dairy or non-dairy. 2 large eggs. 2 tablespoons melted coconut oil or butter. 1 teaspoon vanilla extract. 1/2 cup fresh blueberries or any preferred fruit optional.
Instructions: Preheat oven to 350F 175C. Grease a muffin tin or line with paper liners. In a large bowl, mix together oats, baking powder, cinnamon, and salt. In another bowl, whisk together honey/maple syrup, milk, eggs, melted coconut oil/butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in fresh blueberries or preferred fruit, if using. Divide the mixture evenly into the muffin tin, filling each cup almost to the top. Bake for 25-30 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean. Allow the oatmeal cups to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature. Store leftovers in an airtight container in the refrigerator.
