Ingredients: 6 large eggs. 1/2 cup milk. 1 cup shredded cheddar cheese. 1/2 cup cream cheese. 3 jalapeno peppers, sliced and seeds removed. 1/2 cup diced bacon. 1/4 cup diced onions. 1/4 cup diced red bell pepper. 1/4 cup diced green bell pepper. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon garlic powder. Cooking spray.
Instructions: Preheat your oven to 350F 175C. In a medium-sized skillet, cook the diced bacon until crispy. Remove from the pan and drain on paper towels. In the same skillet, saut the diced onions, red bell pepper, and green bell pepper until they become tender, about 3-4 minutes. In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder. Grease a baking dish with cooking spray and spread the cooked bacon, sauted vegetables, and jalapeno slices evenly in the dish. Drop spoonfuls of cream cheese onto the mixture in the baking dish. Pour the egg mixture over the ingredients in the baking dish. Sprinkle the shredded cheddar cheese on top. Bake in the preheated oven for 25-30 minutes or until the eggs are set and the top is golden brown. Remove from the oven and let it cool slightly before serving.
