Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine the rolled oats, all-purpose flour, granulated sugar, baking powder, baking soda, and salt. In a separate bowl, mix together the melted butter, mashed bananas, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the fresh blueberries. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. For the crumb topping, combine 1/4 cup rolled oats, 1/4 cup all-purpose flour, and 1/4 cup brown sugar in a small bowl. Cut in 2 tablespoons of cold butter until the mixture resembles coarse crumbs. Sprinkle the crumb topping over each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
