Fiesta Fried Rice is a colorful and flavorful dish that combines rice with a variety of vegetables and spices, giving it a festive twist. It's a perfect way to use up leftover rice and create a satisfying meal.
Ingredients: 3 cups cooked rice. 2 tablespoons oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup frozen peas and carrots. 3 eggs, beaten. 3 tablespoons soy sauce. 1 tablespoon chili sauce. 1 teaspoon sesame oil. Salt and pepper to taste. Green onions, chopped for garnish.
Instructions: Heat oil in a large skillet over medium-high heat. Add onion and garlic, cook until fragrant. Stir in bell pepper and frozen peas and carrots, cook until tender. Push vegetables to one side of the skillet, pour beaten eggs onto the other side. Scramble eggs until fully cooked, then mix with vegetables. Add cooked rice, soy sauce, chili sauce, and sesame oil, stir well to combine. Season with salt and pepper to taste. Cook for another 3-4 minutes until everything is heated through. Garnish with chopped green onions before serving.
