Ingredients: 1 cup all-purpose flour. 1/2 cup blueberries. 1/2 cup Greek yogurt. 1/2 cup buttermilk. 1 egg. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. Butter or oil for cooking.
Instructions: Mix the flour, sugar, baking powder, baking soda, and salt together in a large bowl. Mix the Greek yogurt, buttermilk, egg, and vanilla extract in a different bowl using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. A few lumps are fine; don't mix it too much. Add the blueberries slowly and carefully. Put a griddle or nonstick skillet on medium heat and add butter or oil to coat it. Place a quarter-cup of the pancake batter on the hot griddle for every pancake. Start cooking when the top starts to bubble. Then turn it over and cook until both sides are golden brown. Take off the grill and keep warm. Do it again with the rest of the batter. You can top the pancakes with your favorite things, like maple syrup, more blueberries, or a dollop of Greek yogurt. Serve them hot.
