Salt and pepper to taste. 1 tablespoon of olive oil. 1/4 cup of shredded cheese optional. Chopped fresh herbs for garnish e.g., parsley or chives.
Instructions: In a large skillet, heat the olive oil over medium-high heat. Add the diced leftover roasted vegetables and ham or turkey to the skillet. Saut for 2-3 minutes until heated through. Add the leftover holiday stuffing to the skillet and continue to cook, stirring occasionally, for another 2-3 minutes until it starts to crisp up. Ingredients: 4 eggs. 2 onions, finely chopped. 2 tomatoes, finely chopped. 2 green chilies, finely chopped. 1/2 teaspoon turmeric powder. 1/2 teaspoon red chili powder. 1/2 teaspoon cumin seeds. 2 tablespoons vegetable oil. Salt to taste. Fresh coriander leaves for garnish.
