Ingredients: 4 large eggs. 4 English muffins, split and toasted. 8 slices of bacon, cooked until crispy. 2 ripe tomatoes, sliced. 2 cups fresh baby spinach. Hollandaise sauce. Salt and pepper to taste. Chopped fresh chives for garnish.
Instructions: In order to poach the eggs, you need to add water to a large saucepan and stir it around. Add a little vinegar to the water that is already simmering. Break up each egg into a small bowl. Use a spoon to stir the water that is simmering to make a gentle whirlpool. Slide one egg slowly into the middle of the whirlpool. For a runny yolk, poach for 34 minutes. You can cook it longer if you want to. With a slotted spoon, take the egg out of the water and let it drain on a plate lined with paper towels. Do it again with the rest of the eggs. Put together the BLT Benedict: Set out plates with the toasted English muffin halves on them. Place some baby spinach leaves on top of each half. Then add a tomato slice, two bacon slices, and an egg that has been poached. Add pepper and salt. Add a lot of Hollandaise sauce to the poached eggs and top them with chopped fresh chives. Serve your tasty BLT Benedict right away and enjoy it!

Ingredients: 2 English muffins. 4 large eggs. 4 slices of Canadian bacon. 2 egg yolks. 1 tablespoon lemon juice. 1/2 cup unsalted butter. Salt and pepper to taste. 1 teaspoon white vinegar. Chopped fresh parsley for garnish.
Instructions: The English muffins should be split and toasted until they turn golden brown. Bring water to a slow boil in a saucepan, then add white vinegar. Break each egg into a separate ramekin or cup. Carefully place each egg into the water that is just simmering. Poach the eggs for three to four minutes, or until the whites are set but the yolks are still runny. With a slotted spoon, take them out and let them drain on a paper towel. Fry the Canadian bacon in a pan until it's hot while the eggs are poaching. Melt the butter in the microwave or on the stove until it's hot but not boiling. This will make the hollandaise sauce. Blend egg yolks and lemon juice together in a blender. Mix for a short time until everything is well mixed. With the blender on low speed, add the hot, melted butter in a thin stream and blend slowly until the sauce gets thick. Add pepper and salt. Toast the English muffin halves and put them on a plate. Put a piece of Canadian bacon, an egg that has been poached, and a lot of hollandaise sauce on top of each half. If you want, you can add more salt and pepper and chopped fresh parsley as a garnish.
