This recipe combines tender baked cod with a flavorful curry lemon sauce, creating a delicious and aromatic dish that's perfect for seafood lovers. The sauce adds a zesty and slightly spicy kick to the mild taste of the cod, making it a delightful culinary experience.
Ingredients: 4 cod fillets. 2 tablespoons olive oil. Salt and pepper to taste. 1/2 cup Greek yogurt. 2 tablespoons curry powder. Juice of 1 lemon. Zest of 1 lemon. 2 cloves garlic, minced. 2 tablespoons chopped fresh cilantro. 1 tablespoon honey. 1 teaspoon cornstarch. 1/4 cup water.
Instructions: Warm the oven up to 190C 375F. Cod fillets should be put on a baking sheet that has parchment paper on it. Put some olive oil on the cod fillets and season them with salt and pepper. The cod should be baked in a hot oven for 15 to 20 minutes, or until it is fully cooked and flaky when pierced with a fork. Make the curry lemon sauce while the cod is in the oven. Mix Greek yogurt, curry powder, lemon juice, lemon zest, chopped cilantro, honey, cornstarch, and water in a small saucepan. Stir the sauce all the time over medium heat for about 5 to 7 minutes, or until it thickens and smooths out. Take the cod out of the oven when it's done baking and pour the curry lemon sauce over the fillets. If you want, you can add more chopped cilantro and lemon zest as a garnish. Enjoy while hot!
