Indulge in the delightful flavors of crispy cod fillets paired with a zesty sauce and fresh vegetables, all sandwiched between perfectly toasted buns. This Cheeky Cod Burger is a mouthwatering treat that's sure to satisfy your burger cravings.
Ingredients: 4 cod fillets. 4 burger buns. 1 cup of all-purpose flour. 1 cup of panko breadcrumbs. 2 eggs. 1/2 cup of mayonnaise. 2 tablespoons of Dijon mustard. 1 tablespoon of lemon juice. 1/2 teaspoon of paprika. Salt and pepper to taste. Lettuce leaves. Sliced tomatoes. Sliced red onions. Sliced pickles.
Instructions: Start by preparing the cod fillets. Season them with salt, pepper, and paprika. In one bowl, place the all-purpose flour. In another bowl, whisk the eggs. In a third bowl, place the panko breadcrumbs. Dip each cod fillet into the flour, then into the whisked eggs, and finally coat it with panko breadcrumbs. Heat oil in a pan over medium-high heat. Fry the cod fillets until they are golden brown and crispy, about 4-5 minutes per side. Drain them on paper towels. In a small bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper to create the sauce. Toast the burger buns in the pan or oven until they are lightly browned. Assemble your cheeky cod burgers by spreading the sauce on the bottom half of each bun. Place a cod fillet on top of the sauce, followed by lettuce leaves, sliced tomatoes, red onions, and pickles. Top with the other half of the bun. Serve your Cheeky Cod Burgers hot and enjoy!
