With just four healthy ingredients, these vegan peanut butter cookies are very easy to make. Since they don't have any oil or gluten, they are a healthier way to satisfy your sweet tooth.
Ingredients: 1 cup peanut butter. 1/2 cup maple syrup. 1 teaspoon vanilla extract. 1/2 cup oat flour.
Instructions: Set the oven to 350F 175C and heat it up. Put peanut butter, maple syrup, and vanilla extract in a bowl and mix them together until they are well mixed. Slowly add the oat flour and mix it in until a dough forms. Take tablespoon-sized chunks of dough and roll them into balls. Put them on a baking sheet that has parchment paper on it. Use a fork to gently flatten each cookie and make a cross pattern on top of them. Put it in an oven that is already hot and bake it for 10 to 12 minutes, or until the edges are golden brown. After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down. These peanut butter cookies are vegan, gluten-free, and don't need any oil.
